Basicstructure and toxicological studies of amino acid chelates （Zinc Picolinate、Calcium Citrate）

Chelatesrefer to the cyclic structure products formed by the coordination reactionbetween one or more coordination groups and metal ions, and metal amino acidchelates are the products of the covalent combination of metal ions and aminoacids of soluble metal salts at a certain molar ratio (usually 1:1~3). Theamino and carboxyl groups of amino acids are chelated with metal trace elementions, and oxygen and nitrogen are used as coordination atoms, and two or moreatoms are separated by two or more atoms between the two coordination atoms ofthe ligand and form a chelating ring with the central metal ions. The formationof chelating rings results in increased stability of chelated ions in aqueoussolutions compared to non-chelating ions. The average molecular weight ofhydrolyzed amino acid chelate is 150, and if the molecular weight is greaterthan 800, the chelate cannot be absorbed directly through the cell membranewithout hydrolysis in the intestine.

Toxicologystudies of amino acid chelate showed that the semi-lethal LD50 of CuSO4 andFeSO4 for rats was 117 mg/kg and 319 mg/kg, respectively, while the LD50 ofcopper amino acid chelated and iron amino acid chelated were 235 mg/kg and 825mg/kg, respectively. The toxicity of amino acid chelate to rats is about1/3~1/2 of the corresponding sulfate. The amino acids chelated zinc, manganeseand chromium have a much smaller LD50 than the corresponding inorganic salts.
